Tools/materials: rice, 15g hydrated lime, 1300mg clear water, 1 tbsp salt, minced pork, minced onion and garlic, 1 tbsp bean paste, light soy sauce, salt, sugar, pepper, clear water, chopped green onion and bowls.
1. Wash the rice with clear water several times, and then soak it for 8 hours after washing.
2. Prepare 15g hydrated lime and 300g clean water, stir them evenly and clarify them for later use.
3. After the rice is soaked, drain it directly, then put the rice into a cooking machine, add1000g of clean water, and grind it into rice slurry several times. The ratio of rice to clean water is 1: 2.
4. Pour the ground rice slurry directly into the pot, then pour out the clarified part of limewater, and do not pour out the turbid part. Then pour the lime water into the pot, stir it evenly and turn on a small fire to heat it.
5. Stir clockwise with a wooden stick and cook while stirring. At first, it is a thin rice paste, and gradually the rice paste will become thicker and thicker until it is completely cooked, and then continue to cook for a while. The rice paste will start foaming and become very sticky.
6. You can scrape a small piece and put it in cold water to see the state, as long as it is not sticky. Turn off the fire and pour the cooked rice paste directly into the mold. After leveling the surface with a shovel, let it cool naturally. After complete cooling, the demoulding can be reversed. If you can't eat it all at once, you can soak it in water and keep it in the refrigerator.
