Raw materials:
Noodles: 500 grams of gluten, 260 grams of water or milk, one spoonful of salt, 60 grams of sugar, 5 grams of yeast, 5 grams of salad oil and 25 grams of black sesame.
Filling: black sesame 25g, fine sugar 15g.
Exercise:
1. soak the yeast in warm water not exceeding the body temperature for three minutes to activate the yeast activity.
2. Add sugar, salt and oil to the flour, then gradually pour the yeast water and the remaining water into the dough, stir with chopsticks while pouring, and stir the dough until it is smooth by hand when all the flour is soaked in water.
3. Mix the dough, cover it with plastic wrap, put it in a warm place for fermentation, expand it by 2-3 times, and press it with your fingers without collapsing or shrinking.
4. Use time to make sesame stuffing, and mix black sesame with sugar.
5. Take out the dough, put it on the chopping board and roll it into a rectangle with a length of 45cm and a width of 20cm.
6. Dip a brush in water and brush a layer of water evenly.
7. Spread the filling evenly on the dough and press it gently to make it stick to the dough as much as possible.
8. Roll the dough into a cylinder and divide it into 8 equal parts.
9. Put cold water in the steamer, and cover the steamed bread blank on the oiled or lined steamer for 20 minutes. After the water is boiled, turn to low heat and steam 15 minutes.
