Spring pancake (pancake) is a pancake made of flour, usually eaten with rolled vegetables. This is one of the folk food customs in China in the early spring. Eating spring cakes at the beginning of spring means welcoming spring and praying for a bumper harvest. From the Song Dynasty to the Ming and Qing Dynasties, eating spring cakes became more and more popular, and it was recorded that the emperor gave spring cakes to officials in the spring. Spring cakes are simple in materials, convenient to make, flexible and chewy in taste, and can be eaten in a variety of ways. They are wrapped as side dishes, eaten as staple food alone and fried cakes.
