Exercise and Steps:
1. After the rabbit meat is cleaned, put in cold water, add onion and ginger slices, then pour in a little cooking wine, boil the water for two minutes, then take out the rabbit meat and drain it (this step is mainly to blanch it to remove fishy smell).
2. put cooking oil in the pot (put more oil). When the oil is 70% hot, pour in the rabbit meat and stir fry (be careful not to spill it). Stir-fry until the rabbit meat is medium-cooked (the skin is discolored and almost dry). If you don't understand, you can pinch the meat to see if it is red. If it is not red, it is ripe.
3. Stir-fry garlic slices with pepper and bean paste, then add two spoonfuls of soy sauce to color and stir well.

(This step should be quick, peppers will burn easily if they are fried for a long time. )
