Methods/steps
Prepare some raw materials and seasonings for hairtail. Add cooking wine and ginger to remove fishy smell, and add soy sauce, vinegar, garlic and cooking seasoning to enhance the flavor of hairtail. Hairtail has prepared 200 grams. (I bought hairtail for the first time. )
Wash ginger and garlic, mash them and put them in a small bowl. Add a small amount of water, a small amount of salt and a proper amount of soy sauce, cooking wine, vinegar and seasoning into a small bowl, and stir well for later use.
Wash hairtail, clean the area near the head of hairtail, remove internal organs and so on, rinse it under the tap, then put it in a basket to drain and put it on a plate.

At first, the hairtail was fried on high fire, then turned over twice and then slowly fried on low fire. Turn the hairtail upside down from time to time to prevent it from frying until it is golden on both sides.
Fry hairtail until golden on both sides, turn on medium heat, stir seasoning in a small bowl, then pour it on hairtail and simmer. Turn it over a few times in the process of stewing hairtail to make hairtail tasty.
