The most distinctive is Lizhuang white meat, which is exquisitely cooked, unique in eating, rich and delicious in water seasoning, and feels fat but not greasy after eating, which makes people memorable.

The program "Home Far away" says that if you come to the ancient town of Lizhuang, if you haven't tasted Sanbai, you haven't been to Lizhuang.

So what are the three whites in Li Zhuang, white meat, white cake and white wine?

Lizhuang Ancient Town is located in Cuiping District, Yibin City, Sichuan Province. Lizhuang ancient town is the first town in the Yangtze River. At first, this place attracted me, not Sanbai, but an ancient town with anti-Japanese culture.

During the Anti-Japanese War, when Japanese imperialism bombed and Shanghai fell, there was no room for a desk in this international metropolis. After five relocations, Tongji University and other institutions are facing another relocation. China is already in dire straits, and wars are raging everywhere. Sichuan has barely become the rear area. Mr. Luo Nanchang, the leftist of the Kuomintang, was then the secretary of the Lizhuang District Committee of the Kuomintang. He called all influential gentlemen to discuss the admission of Tongji University and other cultural institutions. These people are open-minded, far-sighted and patriotic, so everyone agreed and quickly sent a message of 16, "Welcome to Sichuan and Lizhuang, all of them need local supply." Hit the floor, a huge force. This riverside town of 3,000 people has to accept 1 10,000 people from other provinces, which shows the broad mind of the people of Lizhuang to go to the national disaster and share their worries for the country. What a hero! Just like the horn of the charge, Li Zhuang ushered in, with ten universities and research institutes such as Tongda, Jinda and Central Museum, and celebrities and scholars from all walks of life pouring in. Liang Sicheng's Architectural History of China was born in Lizhuang. Lizhuang has become a gathering place for literati and a famous cultural anti-Japanese center. It is an ancient town that cultivates the spirit of the Chinese nation. Although small, it has the potential to accommodate hundreds of rivers.

I came to Lizhuang Ancient Town, saw the Anti-Japanese War Exhibition Hall, and then went shopping in the evening. Singing an empty plan, I have to find a restaurant to eat.

First, Lizhuang white meat

I saw all the storefronts, big and small, hung with Li Zhuang's white meat flag, according to the program "Home Far Away". If I don't eat white meat when I come to Lizhuang, it means I didn't come to Lizhuang. And I'm a fat eater, so I can't let it go. Eat one at night, which affects sleep. Alas, I drool at the sight of the flag on the storefront, no matter I come to a small shop. The owner of this shop is a middle-aged woman. She is very enthusiastic. Before I could speak, she said, "You are a person, just a small portion of white meat and a portion of stone-ground tofu." I don't think there are any green vegetables, so I said to replace the stone mill tofu with the side dish tofu soup.

As soon as the words fell, the boss picked up a piece of white meat and threw it into a basin filled with warm water for scalding. Spread a clean towel on the chopping board, put the scalded meat on the towel and make a block. The boss said that towels were put in order to prevent slippery and absorb water. I didn't bother her again when I was cutting meat. I saw that she was highly focused. She used a special knife to get the knife from the pigskin first, and then went down almost by feeling. The meat slices are even in thickness, each slice can be as long as 15 to 20cm, and 8 to 1 2cm in width, and the thickness is only1to 2mm. The sliced meat is thin enough for people to see, so the sliced white meat should be placed flat on the plate. I thought it would be fried.

About 7 or 8 minutes, a plate of white meat is placed in front of you, surrounded by fat meat, with lean meat in the middle and a small dish dipped in water next to it. I was immediately startled and cried,' Mom, what kind of meat is this? Eat it and open the door. So braised. "A sister at the next table also said with a Yibin accent," Wrap the meat with chopsticks, then roll it in the water and you can eat it. It is delicious. "I followed her method with trepidation. After the white meat is dipped in the seasoning, the entrance feels fragrant and refreshing, fat but not greasy, chewed and slag, with endless aftertaste. It is really delicious. So one piece is two pieces, and in a short time, five pieces are dried, and there is no feeling of stewing. By this time, the side dishes had been served, some were eaten, and another piece was wrapped. Oh, I really can't eat, and this small portion is not light.

After chatting, I realized that the water she dipped in was made into paste with garlic, pepper and pepper, named "Bazin pepper", and then mixed with soy sauce, monosodium glutamate, sugar and sesame oil. Spicy taste can be added or subtracted according to your own preferences. Seasoning must be bright, fragrant and shiny, especially garlic, which has a fresh taste.

I think I can cook for myself when I go back, but how can I cut vegetables like a doorknob? First of all, the knife worker can't reach it, so I can only do it.

Lizhuang white meat has five characteristics:

1, fine knife work. This is the most critical link and it will take a long time to realize.

2, the seasoning is outstanding. This is ok, according to the boss's formula.

3. Rich in nutritional value. White meat is the part of the pig's hind legs after the first knife is removed, commonly known as "two-knife meat", and each pig weighs only about three kilograms. Because this part of the meat is good, the fat is more symmetrical, there are no bubbles, and there is less embarrassment. After cooking, the fat ridges are closely connected and do not separate in layers, giving people a sense of beauty.

5. Legends

According to folklore, the white meat in Lizhuang evolved when people from all walks of life sliced the cut fox Su Daji and ate it in garlic paste during Zhou Wuwang's attack and uprising. Because the sliced meat is thin and long, it is wrapped in chopsticks, so it is called "foot-bound meat". During his stay in War of Resistance against Japanese Aggression, at the suggestion of Meng Tao, a cultural person who moved to Lizhuang, Cuiping District, the owner of "Liu Fen" restaurant readily accepted and changed the name of "foot-binding meat" to "Lizhuang white meat".

Second, Lizhuang White Cake

There are white cakes in shops of all sizes in Lizhuang Ancient Town. I bought some and tasted them. Very sweet. The main ingredient is high-quality glutinous rice, which is fried and then added with some Chinese herbal medicines that can help digestion, such as yam. And then grinding into fine powder, adding white sugar, and then pressing and molding with a mold.

Three. Lizhuangjiu

Lizhuang Liquor, a specialty of Lizhuang Town, Cuiping District, Yibin City, Sichuan Province, is a landmark product of chinese national geography.

With its unique pure ancient brewing technology, Lizhuang Liquor brewed "Fen-flavor liquor" with the unique characteristics of "clear and transparent, pure fragrance, comfortable fragrance, mellow and sweet taste and long aftertaste". The most important thing is delicious but not expensive, which is deeply loved by local people. Since I can't drink it, of course I haven't tasted it.

Friends, when you come to Lizhuang ancient town, you must remember to taste Sanbai, white meat, white cake and white wine. You will come on impulse and return satisfied.
