Boning chicken legs, removing excess fat and chicken skin, and shredding onion.
Beat two eggs into a bowl and beat the egg whites.

Half a bowl of water, about 2g of Japanese stock essence, 1 tbsp of soy sauce, 1/2 tbsp of cooking wine, 1/2 tbsp of sugar, 1/2 tbsp of sake, and mix well for later use. Salt should be enough. If you feel that the taste is not enough, adjust it yourself.
On medium heat, heat the pan, and fry the chicken skin down until the skin oil is crisp. This step is only to force out the excess oil, not to fry the chicken.

Dry the excess oil in the fried chicken pot with a kitchen towel.
Pour the prepared juice into the pot.
Boil and add shredded onion.
Cut the chicken into bite-sized pieces and cook it in a pot. Skim the foam from time to time.
Add half the egg mixture, cover and cook for about half a minute.
Add the remaining half of the egg mixture and cook for more than ten seconds until slightly solidified.
Pour it on hot rice and sprinkle with chopped green onion.
