French cuisine is famous for its subtle taste, clever use of onions, juicy animal offal (foie gras) and the use of alcohol and flame. It's romantic, organized, complicated and laid-back.

Mexican food is the opposite in many ways. This is a direct attack on the senses; Is rich and powerful; Colorful vibration, pull the inner child out of you and play with a strong taste; When it comes to the use of pepper, corn and avocado, it is the only real king, and it provides all this for the whole world.

Just as it provides so many ingredients for the world, the sheer diversity of Mexico (wider than France (even including all its regions) makes any comparison meaningless because Mexico can accommodate several times as many people and land as France). In addition, Mexican food is always changing and incorporating new things; Its development speed is much faster.

In fact, you would say that the only similarity between us in food is that we are more adventurous than our neighbors in ingredients.

So they are not "peers", and there is no real comparison that will not hurt the two. They are perfect complements.

So when they are combined, they are at their best, compared with the plain competition (whether Mexican or French), which is exactly what we do in Mexican food.

Take a small example of Brittany/Mexico:

French origin/melon. In my opinion (I like French crepes), the best crepe dessert (yes, even better than strawberry crepes, even worse than those just "boring" Nutella crepes-ha).

In America, my favorite delicious crepe is the "hole in the wall" in Ottawa. As for sweet crepes, my favorite is "Peace crepes" in Mexico City (I think candy in Canada is generally unbearable-why is there such a long queue, guys? ) You want me to get diabetes? Ha). But only in the second month can you eat Cajeta crepes.
