The second part is drying.

2. Take it out to dry every day and receive it at home at night. If there is a small courtyard or an open-air balcony, you can dry it at any time, except when it rains. After consulting professionals, we resolutely picked out the sticky dried radish and threw it away. The sticky dried radish has gone bad and can't be eaten any more.

After four or five days, the dried radish finally dried. Just do it this way.

Part III Cleaning

This part is the key to ensure the cleanliness of dried radish. During the drying process, some dust and impurities will adhere to the surface of dried radish. If it is not cleaned, it will affect the taste and easily deteriorate.

Ingredients: three pots of boiling water, two clean pots and a clean filter basket.

1. Put the dried radish into a pot, add a pot of boiling water, stir with chopsticks, let the dust and impurities come out slowly, soak for 5 minutes, and then filter out the water with a water filter basket.

2. Add boiling water again, stir with chopsticks and soak for 5 minutes. The soaked water at this time is clearer than the first time. Repeat the same steps, and the water becomes clear for the third time. If you don't like the chewy dried radish, you can extend the soaking time for the third time, 10- 15 minutes. Then use the filter basket to control the outflow of water.

The fourth part is the preparation work before pickling.
