1, bean dregs steamed stuffed bun:
Noodles, good noodles, ordinary noodles will do.
Stuffing of steamed stuffed bun: Auricularia auricula, Lentinus edodes, dried leaves of lichen, refined flour (made of red taro powder, so that it won't break the sticky pot when frying), dried shrimp, egg skin and bean dregs.
Soak Auricularia auricula, Lentinus edodes and dried moss leaves in water, clean and chop. Wash the dried leaves several times, or they will taste bitter. Stir-fry separately in water and oil.
Shrimp should be soaked in water before frying, so that the flavor of shrimp will be particularly strong.
The egg skin should also be chopped, and the bean dregs need not be fried, because the bean dregs will paste the pot.
Put these ingredients together, add salt, chicken essence, thirteen spices, sesame oil and oyster sauce (not too much) and mix well, and you can wrap them.
Wrap it and steam it in a pot 15 minutes or so.
2. Stir-fried bean dregs
Put the bean dregs into gauze bags, rinse them with clear water until they are clear, drain the water, and stir-fry them in a pot until they are dry. Soak the green beans soft the day before, cook them with water, pick out the bean skins and wash them for later use;
Light a fire in a pot and add oil. When the oil temperature reaches 30%, add ginger and chopped green onion and stir fry. Stir-fry bean dregs evenly, add salt, pepper, chicken essence, soy sauce, soup stock and green beans until the bean dregs are fragrant. Thicken with water starch and serve. Open the middle, put some chopped green onion, and pour sesame oil on chopped green onion.
3, bean dregs cake
Beat an egg in the bean dregs, add proper amount of flour, salt and chopped green onion.
If it is too dry, you can adjust the consistency with water and stir it into a batter without flour particles.
Spread a thin layer of oil evenly on the pan. When the pot is hot, pour a spoonful of batter into it and spread it into a round cake.
When the bottom is cooked, turn over, fry until both sides are golden, remove and cut into pieces.
