European eel (scientific name: Anguilla japonica (Chuetu, 1984) is a kind of fish of European eel, commonly known as Anguilla japonica.
In Chaoshan area, eels are still called "eels". There are generally two kinds of eels in the market: black-eared eels and sea eels. Black-eared eel is an eel that grows in fresh water and breeds in deep sea (that is, common white eel), while sea eel grows and breeds in seawater, and Chaoshan is also called salmon. Eel is a migratory fish that can fall into the sea. It usually lives in freshwater rivers and streams, and especially likes large reservoirs. It swims to the ocean to breed in winter, and the born eel swims back to fresh water.
