Home-cooked sweet and sour pork ribs

Ingredients: 800g ribs, ginger, onion, pepper, star anise, cooking wine.

Seasoning: a little salt, light soy sauce, dark soy sauce, crystal sugar, aged vinegar, clear water or golden juice: 1: 2: 3: 4, namely 1 spoon cooking wine, 2 tablespoons soy sauce, 3 tablespoons sugar and 4 tablespoons vinegar.

Exercise:

1, put cold water into the pot, add cooking wine, pepper, star anise and scallion, cook ginger with strong fire, simmer for 15 minutes, and take out.

2, pour a little oil in the pot, add rock sugar and simmer until it melts.

3. When the color is amber, add the ribs and stir well.

4. Add boiling water along the side of the pot, be sure to boil it, then add 2 tablespoons of soy sauce, half a spoonful of soy sauce, 3 tablespoons of vinegar (put it when leaving a little pot), and 3 crystal sugar. After boiling, simmer for 20~30 minutes. (Note: The consumption of rock sugar here is reduced because more than half of the sugar is used when frying, so the consumption of sugar here is less. If the sugar is not fried, put it in the normal proportion. )

If you are not sure, you can mix a bowl of sweet and sour juice with the golden ratio to ensure that there will be no mistakes and absolutely no failures. Empty bowl: 1 tbsp cooking wine, 2 tbsps soy sauce (I used 1.5 tbsps soy sauce, 0.5 tbsps soy sauce, or 1 tbsps soy sauce), 3 tbsps sugar, 4 tbsps vinegar (preferably rice vinegar) and water. This ratio should also be adjusted according to the number of ribs. If you don't master it well, you can taste the sweet and sour before making adjustments.

5. Finally, add a little salt to taste the juice, sprinkle with white sesame seeds, and pour in a little vinegar and mix well.

Tips:

1, pay attention to the heat when frying sugar color, stir fry with low heat. Boiled water should be used to stew ribs, otherwise the taste will be very dull and tender.

2. The golden ratio of sweet and sour juice: 1:2:3:4, namely 1 spoon of cooking wine, 2 tablespoons of soy sauce, 3 tablespoons of sugar and 4 tablespoons of vinegar, which is foolproof. Of course, some like sweet and some like sour, so the amount of sugar and vinegar can be exchanged.

3, the amount of vinegar should not be cooked thoroughly at one time, it is best to leave a little, put it before the pot, the taste is better.
