Ingredients: 3 pieces of salted tofu, 7 pieces of eggplant, 6 pieces of garlic, a small piece of salted fish in plum sauce, half a red pepper, a small bowl of minced meat, salt, oil, oyster sauce, soy sauce, clear water, chopped green onion, etc.
The specific steps are as follows:
Step 1: First, treat the eggplant. I use small purple eggplant grown at home. Because the season is coming, these eggplants are getting smaller and their skins are not so beautiful. Wash the eggplant first, peel off the bad skin and then cut it into strips. Try not to be too small. After cutting the eggplant, put it in a large pot and soak it in water to prevent oxidation and let it absorb some water.
Step 2: Prepare 6 cloves of garlic, peel and wash them, pat them with a knife, and then chop them up for later use. Wash half a red pepper and chop it for later use. If you like spicy food, you can add a few more millet peppers. This kind of red pepper I use is not spicy, but mainly decorative. Then prepare a small piece of mackerel marinated in plum, wash it, cut it into small pieces for later use, and finally chop a small bowl of minced meat.
Step 3: Prepare three pieces of salted tofu, cut the tofu into small pieces, not too small, or cut it into strips or shapes you like, as long as it is convenient to eat and looks good.
Step 4: Prepare a pot for frying tofu, pour oil into it, and then put the cut tofu pieces into it. Turn down the heat and fry slowly. A watched pot never boils. Tofu can't be fried by fire. Remember to fry tofu. The fire must not be too big. When the tofu is cooked, we sprinkle a little salt evenly to add a little flavor, and then turn the tofu upside down and continue frying until it is golden on both sides. Turn off the fire and fry the tofu.
Step 5: Take out the soaked eggplant strips and squeeze out the water. There is no need to wash the pot when the tofu has just been fried. Let's add some more oil to heat the oil. When the oil is hot, pour in the eggplant and fry until it is soft. Add a little salt to make it easier to fry. After the eggplant strips become soft, turn off the fire and transfer them to a casserole and spread them on tofu noodles.
Step 6: Add a little more oil to the pot and stir-fry the minced meat we have prepared. After frying, add minced garlic and salted mackerel. After pouring both kinds, continue to stir-fry and stir-fry all the flavors. After frying, let's adjust the taste. A little salt, not too much salt. This salted mackerel is already salty. Add a little oyster sauce.
Step 7: Turn off the fire after the minced meat sauce is boiled, then transfer the minced meat sauce to the casserole and pour it on the eggplant and tofu.
Step 8: Cover the pot and turn to high heat for about 3 minutes. If the eggplant is not fried soft enough, you can cook it a little longer in this step until it is soft enough, but turn down the heat, otherwise it will be easy to paste the bottom, because we don't have much juice.
Step 9: It's almost time. Turn off the fire and open the lid. Finally, sprinkle a little chopped green onion to enhance the flavor, and this eggplant tofu pot will be ready.
