Stir-fried mushrooms and celery with vegetables
Mushrooms, celery, carrots, garlic, sugar, oil, salt.
Exercise:
1. Wash and cut mushrooms, wash and cut celery, shred two carrots and mash garlic.
2. Put the oil in the wok, put the minced garlic in warm oil and wait for the fragrance to float out. Add mushrooms, celery and carrots and stir fry. If it is dry, add a little water, stir-fry for about 2 minutes, add a little sugar and salt to taste, and take it out of the pan and plate it.
Fried celery with vegetables
Materials:
Celery, carrots, garlic, salt, mushrooms and oyster sauce.
Exercise:
1, stir-fried carrots
Cook the garlic in a pot, and stir-fry the carrot until it turns yellow and transparent.
2. Stir-fried celery
Pour in chopped celery, stir fry, pour in water, cover the lid, simmer on low heat until the water is almost dry (celery is easy to dry due to lack of water), add salt and a little mushroom oyster sauce to taste (less oyster sauce will otherwise change color).
Radish ball material:
North tofu 1, carrot 150g, coriander 100g, vermicelli 30g, egg 1, flour 120g, salt, chicken essence 5g and white pepper 3g.
Exercise:
1. Dry the tofu and break it. Wash and peel carrots and knead them into filaments. Wash and chop coriander. Soak the vermicelli and cut into small pieces.
2. Mix the above materials, add an egg, add flour and stir well.
3. Then add salt, white pepper and chicken essence and stir for a while. Make a ball of even size with handball.
4. Put oil in the pot. When it is 60% hot, put the meatballs in the frying pan. When they turn completely golden yellow, take them out and control the oil.
Fried spring rolls with leeks, mushrooms and eggs;
Appropriate amount of leek, spring rolls, mushrooms, oil, salt and eggs.
Exercise:
1. Cut leek into 2 cm long pieces and shred mushrooms;
2. Put oil in the pot, stir-fry shallots and mushrooms, and put a little salt at the end;
3. After the eggs are scattered (add a little salt), fry them in a non-stick pan with less oil into thin egg skins, cool them slightly and cut them into 2 cm long filaments;
4. Mix the egg skin with chives and mushrooms, and cool to wrap the spring rolls.
Precautions:
1, when wrapping spring rolls, you can prepare a little cold water and stick the skin well;
2, chives and mushrooms will not produce too much water. If there is water, you can control the water in the stuffing when wrapping;
3, you don't need to put too much oil when frying, otherwise it will be very greasy in summer, so it is fried spring rolls instead of fried;
4. If it is a spring roll, stir-fry some minced meat and put it in the stuffing.
