Braised swallow meat
Ingredients: 300g of swallow meat, winter bamboo shoots, watercress, pickled pepper, ginger, garlic, sour radish, green onion, salt, monosodium glutamate, chicken essence, fresh soup, cooking wine, pepper, fermented glutinous rice juice, sugar and refined oil.
Practice: (1) African swallows are slaughtered and washed, then cut into strips, put into boiling water, add salt and cooking wine, and drain the blood. Slice winter bamboo shoots, chop watercress, pickle pepper, remove pedicels and cut seeds into powder, peel and clean ginger and garlic, cut ginger and garlic rice, cut sour radish into strips, and clean green onions and cut into sections.
(2) Put the pan on a big fire, heat the refined oil to 60% heat, add the African Swallow Block, add the cooking wine, stir-fry until dry, add the watercress and pickled pepper powder, stir-fry and color, add the ginger slices, garlic slices and pickled peppers, add the fresh soup, add salt, fermented glutinous rice juice, sugar and pepper, and cook until the soup boils, skim off the floating foam with a spoon, and move to low heat.
