Braised pork hand in soy sauce
1. Cut onions, pat ginger, crushed rock sugar, soy sauce, soy sauce, oil consumption, cooking wine and other seasonings for later use.
2. Soak soybeans overnight (the amount of soybeans in the picture is a bit large, only half of them are used)
3. Wash pig's trotters, cut them into large pieces and soak them to stop bleeding. Add water and onion and ginger to the pot to boil, then add pig's trotters, open the lid and cook for two minutes.
4. Remove and drain after skimming the floating foam.
5. Stir-fry the sugar color: put 1 tbsp salad oil in the pot, add 1 tbsp crushed rock sugar, and cook on low heat until the rock sugar melts and the color becomes darker.
6. Pour in the cooked pig's trotters and stir-fry until all the sugar is present.
7. Pour in 2 tablespoons of soy sauce, 1 tablespoon of soy sauce and stir-fry until the trotters are all colored.
8. Pour in 1 tablespoon cooking wine, 1/2 tablespoons oyster sauce, ginger slices, star anise and cinnamon, stir well, and add enough hot water to cook trotters.
9. Add the soaked soybeans and bring to a boil.
10. Turn to a pressure cooker and stew for 40 minutes, or cover it directly and simmer for two hours. Open the lid and turn to high heat to collect the thick juice.
