2. Wash shallots with clear water and dry them for later use.
3. Cut the shallots into sections, put them in a pot of hot oil, stir-fry them on low heat, and take them out.
4. Fry the eggs and ham slices with the remaining oil in the pan.
5. Put a spoonful of onion oil, a spoonful of soy sauce, a spoonful of oyster sauce and a little salt in the bowl.
6. When the noodles are cooked, remove them from the bowl, put two spoonfuls of noodle soup, fried eggs and ham slices, and a little chopped green onion.
