The owner of this restaurant, Jodi Scalavera, is Italian. He said it was more like a coincidence that he opened this store. In 2006, he moved to Staton Island from Brooklyn, new york. By chance, he saw a favorite storefront in the street, which is where today's Anoca Maria restaurant is located.

Jody's mother had just died, and before that, his sister and grandmother had also died. Losing female relatives one after another made Jody sadly miss the scene of grandma cooking in the kitchen, so she wanted to open a restaurant specially made by grandma. In his view, although all restaurants have chefs trained by professional chefs, grandma can bring many things different from professional chefs to the kitchen. Jody thinks that grandma's cooking contains their feelings, and their recipes are full of affection for generations.

Before opening the store, Jody had no experience in business or hotel management, but he still insisted on opening a restaurant. The name of the restaurant "Ainotka Maria" is his mother's name. In Jody's own words, he is "operating with heart, not relying on business acumen".

With Jody's love and creativity, the restaurant opened like this. At the beginning, all the grandma chefs in the store were Italian. Until 20 15, the first non-Italian chef was born in the store. It was a grandmother from Pakistan. Since then, restaurants have started to hire more and more grandmothers from other countries as chefs. Today, these chefs and grandmothers come from Sri Lanka, Japan, Russia, Colombia, Armenia, the Philippines and other countries, all over Europe, Asia and America.
