Then we wash the celery with flowing water, especially where the celery is sunken. Sometimes there will be some soil sticking to it, so we should wash every one. After the celery is cleaned, it is necessary to remove an old tendon outside the celery. We can directly pinch the root tail and tear it off, and remove the old tendons outside, without affecting the taste of celery.

Because the roots of celery are thick, we have to cut the roots in half with a kitchen knife and then cut them into small pieces. After the celery is cut, we put it in a pot and add some edible salt to stir it. Adding edible salt can remove excess water from celery, and then let it stand for about ten minutes.

After more than ten minutes, the extra water in celery has been soaked out, so we have to pour out the water, so that when we fry celery, it is not easy to get water, and the fried taste will be more crisp and refreshing. Now let's pour some cooking oil into the celery and stir it.

When the water in the pot is boiled, we can put the celery in, cover the pot and steam for two minutes. The steaming time should not be too long, so that the nutrients in celery can be locked without affecting the taste of celery. This method is more suitable when frying celery.
