Quzhou duck head is one of the "three heads and one palm" in Quzhou, which is the earliest and most famous. It is an economic snack that began to appear in Quzhou City in 1980s.
The cooking method of duck head has its unique skills, but it can't be separated from the auxiliary materials such as pepper, ginger, garlic, cinnamon, medlar and Chinese medicine, so the cooked duck head tastes delicious. In the local restaurants in Qucheng, duck head is almost the main signboard of every household, especially the food stalls in the night market. If there is no duck head in any food stall, it is estimated that it will not last. Quzhou Santou (rabbit head, duck head and fish head) is a local flavor food in Quzhou. Duck head is one of the three heads. Besides rabbit head, duck head and fish head, there are duck feet.
Ingredients: about 3 kg of duck head, 2 cups of Quzhou duck head soy sauce1/,2 cups of rice wine1/,2 tablespoons of sugar, a little spiced powder and pepper, and a proper amount of pepper.
Spiced seasoning: a few onions, a few ginger, star anise 1 tablet, 2 pieces of thick cinnamon, 30 pieces of Lycium barbarum, crystal sugar 1 spoon, sesame oil 1 spoon, marinade 1 bottle, soy sauce 1 cup and water/kloc.
Production process: (1) The duck head is marinated in marinade for 4-5 hours. (2) preheat the pan, stir-fry the crystal sugar with sesame oil, add other seasonings and stir-fry, then add the salted duck head, dry-fry and color. (3) Pour all marinades and marinate for 45-50 minutes on medium fire.
