Mu Shu meat in Mu Shu meat refers to eggs, and Mu Shu meat is a northern dish. In other words, old Beijing pays more attention to the old principles, and the sound of eggs is taboo. Eggs are generally called chickens, preserved eggs in the south, preserved eggs here and scrambled eggs are also called yellow vegetables. The dishes with eggs as auxiliary materials are called osmanthus, because the golden color and shape of fried eggs are similar to osmanthus. In old Beijing, the word "Mu Xi" is not called muxi, but Xu Mu, so once simplified, muxi meat becomes Xu Mu meat. Of course, these two words are mixed in many recipes, but everyone knows that the dishes are the same.
This dish also contains fungus and wood characters, so it is called moo Shu pork.
