With the continuous improvement of people's living standards, various household appliances have become a necessity for every household. Their popularity provides a lot of convenience and quickness for people's life, which can appropriately extend the shelf life of food and help reduce some waste.
Some time ago, there was a heated discussion about whether steamed bread can be eaten in the refrigerator for more than three days and whether it will produce aflatoxin.
Especially for northerners, it is common to store steamed bread in the refrigerator. So will it really breed aflatoxin if steamed bread is stored in the refrigerator for more than three days? If you are curious, let's take a look.
0 1 First of all, what is aflatoxin?
Aflatoxin generally refers to aflatoxin, which is the metabolite of Aspergillus flavus and Aspergillus parasiticus. It is a carcinogen, which has a destructive effect on human liver tissue, mainly causing liver cancer, and can also induce diseases such as kidney cancer, bone cancer and rectal cancer.
Aflatoxin in daily life mainly comes from moldy nuts and their products, such as peanuts, walnuts and melon seeds.
If a certain amount of aflatoxin is ingested, symptoms such as abdominal distension, vomiting, and stomach discomfort will appear in light cases, and symptoms such as liver pain, ascites, and coma will appear in severe cases.
If aflatoxin is ingested for a long time, it will lead to chronic liver injury, such as liver parenchymal cell deformation and cirrhosis. , and even cause liver cancer.
Aflatoxin has strong high temperature resistance and cannot be destroyed by ordinary heating temperature. It can withstand the high temperature of 280℃ and is insoluble in water and alcohol.
02 frozen steamed bread can't be eaten? Will aflatoxin be produced if it is kept in the refrigerator for more than 3 days? After reading it, I understand.
For this problem, relevant experts have done an experiment.
Experts prepared 200 identical steamed buns, which were divided into 10 groups with 20 steamed buns in each group.
Put 1 steamed bread in the refrigerator for one day;
The second group of steamed bread was refrigerated in the refrigerator for two days;
The third group of steamed bread was refrigerated in the refrigerator for three days;
And so on,
Put 10 steamed bread in the refrigerator for 10 days.
Through the long-term observation of the experimental steamed bread, it was found that the steamed bread frozen in the refrigerator for more than three days did not appear aflatoxin and microorganisms. Surprisingly, the steamed bread stored in the refrigerator for 10 days did not show microorganisms and aflatoxin, but the taste and nutritional value were different from those of fresh steamed bread.
The temperature in the refrigerator is very low. The breeding temperature of aflatoxin is 12~42℃, and the optimum breeding temperature is about 33℃. In addition, the breeding of aflatoxin needs a specific environment, the humidity should be above 78%, and the optimum humidity should reach 98%. Aflatoxin can only grow when the temperature and humidity reach the standard and ventilation is provided.
Obviously, the environment in the refrigerator does not have the conditions for aflatoxin breeding. If the steamed bread is cooked, put it in a clean container and put it in the refrigerator with plastic wrap. Even if it is stored for 1~2 months, there is no big problem, but the taste is completely different from before.
What kind of steamed bread is inedible?
1. Fried steamed bread
Slice the steamed bread, coat it with egg liquid, and then fry it in the oil pan. After frying, the taste of steamed bread is improved many times, and it is very rich, from snacks to big meals, all of which are delicious dishes.
Although this kind of food is delicious, it is not recommended that you often eat steamed bread. It is a high-calorie food. After frying, the calories will double and the body will eat too much oil. For a long time, obesity is not easy to bring. Obesity is the inducing factor of many diseases, so we try to eat less fried steamed bread.
Dye steamed bread
This kind of steamed bread is made of recycled steamed bread. Preservatives are added to prevent mildew, such as potassium sorbate, colorants and sodium cyclamate are added.
In order to reduce costs, these manufacturers use sodium cyclamate instead of white sugar. Sodium cyclamate is a chemically synthesized food additive and has no nutritional effect. On the contrary, if you often eat dyed steamed bread with excessive sodium cyclamate content, it may cause harm to the liver and nervous system.
3. Whitening agent steamed bread
Why are many pasta sold outside much better in color than steamed at home? In particular, some steamed buns look as bright as fake. In fact, this does not rule out that some unscrupulous merchants will add a chemical component called whitening agent. The main component of this whitening agent is benzoyl peroxide.
This substance is a strong oxidant. Long-term use of this substance will do some harm to our skin and respiratory tract. If you see that the steamed bread sold in this store is too white when you buy steamed bread, don't buy it at this time and choose another steamed bread.
How to stay away from aflatoxin in daily life?
1. Keep chopsticks and chopping boards dry.
Chopsticks and chopping boards should be placed in a place where water can be drained. The chopstick box is kept dry, and the chopstick head is up. Clean the chopsticks box regularly, the bottom is easy to grow mildew. Separate raw and cooked chopping boards, and wash them in time after use, leaving no residue.
2. Try not to hoard food
The most effective way to avoid aflatoxin is to cut off the source and prevent food from becoming moldy and producing aflatoxin. When buying food, if the packaging is found to be unclean and damaged, do not buy it; When buying nuts, try to choose small packages and don't hoard goods.
3. Don't buy peanut oil that is not a big brand.
Peanut oil is more prone to mildew and produces strong carcinogenic aflatoxin, especially peanut oil produced by small workshops is a high incidence area of aflatoxin, so try to use edible oil produced by reliable manufacturers.
4. Eat more fresh fruits and vegetables.
On the one hand, there is basically no aflatoxin in fresh fruits and vegetables. In addition, fresh fruits and vegetables can effectively improve our body's immunity and reduce the harm caused by eating food containing aflatoxin by mistake.
