1. Ingredients: 250 grams of hind leg mutton, 5 grams of white sesame seeds, 2 green onions, 300 ml of vegetable oil, 2 tablespoons of cooking wine, 1 teaspoon of chili oil, 1 teaspoon of pepper oil, cumin 2 tablespoons, 1 tsp chili powder, 1/2 tsp allspice, 1 tsp salt, 2 tbsp starch, 1/2 tsp chicken powder.
2. First cut the hind leg mutton into slices or small pieces.
3. Add the prepared white sesame seeds and seasonings except vegetable oil and mix well.
4. Cut the green onions into sections and stir-fry them into green onion oil until fragrant.
5. Let the scallion oil cool slightly, pour it into the mutton, mix well, and marinate for about half an hour.
6. Take toothpicks and skewer the mutton pieces.
7. Pour oil into the pot and heat until cooked. Add mutton and fry over medium heat for about 1 minute. Remove and control the oil.
