It is best to wrap shredded apple with a layer of starch paste. Fry it in the oil pan first and take it out. Then put sugar in the hot oil (I usually use rock sugar), paste it and add the fried apples. I usually do this, occasionally adding white vinegar to soak apples. I read the menu earlier and said it would be better to add egg white. After I tried it, I felt a little fishy. Not recommended. I still think it's good to wrap it directly with starch paste.
