250g fresh noodles, 2 purple onions, lard 100g, soy sauce 15ml, sesame oil 15ml, green garlic 1, chives 1, salt 5g, and appropriate amount of broth.
Exercise:
1. Wash the onion and cut it into thin slices. Slice onion and green garlic for later use.
2. Dissolve the lard in the pot, then add the onion slices and stir fry slowly with medium and small fire until the onion turns dark brown and has been fried very crisp. This step is not just frying scallion oil;
3. While frying the onion oil, cook the noodles in the soup pot, and then put a spoonful of onion oil and salt in the bowl;
4. Pick the cooked noodles into the bowl, add the broth and pour in the sesame oil, sprinkle with chopped green onion and minced garlic.
