Potatoes are probably the favorite food of all people in China. There are steaming, frying, boiling and baking, and the most classic is fried potato shreds. Whether eating at home or in a restaurant, the first course must be fried shredded potatoes.
As the most commonly used food in home cooking, potatoes have different names in different places. Potatoes, yams, potato heads and potatoes are all called potatoes. Fried potato chips
Prepare ingredients: potatoes, garlic, dried peppers, onions, vinegar, salt, chicken essence, etc.
Step 1: Peel the potatoes and cut them into even slices. Cut the slice into thin filaments with uniform thickness. Remember not to cut it too thin or too thick. Soak the cut filaments in cold water to fully remove starch from potatoes. It will be more brittle when fried.
Step 2, cut the prepared garlic, onion and dried pepper into small pieces for later use.
Step 3: Heat the pan, add oil and slide the pan. This step is to prevent the pan from sticking, and then add the right amount of oil. After the oil is heated, add the prepared onion segments and saute until fragrant. Stir-fry dried Chili peppers for 5 minutes, then add shredded potatoes, stir-fry until it is broken, start seasoning, add appropriate amount of salt, chicken essence and vinegar, and continue to stir-fry for 1 minute.
