1, it is best to choose cucumber strips as mixed beef, which is the most tender part of cattle. Remove the outer fascia of beef, cut it into several large pieces, soak it in clear water for a while, then soak it in bloodletting water, then cut it into thin slices across the grain and put it on a plate. Add a spoonful of pepper, two spoonfuls of water, two spoonfuls of light soy sauce and half a spoonful of dark soy sauce, and stir well by hand. Take another bowl, add a tablespoon of sweet potato starch, soak it in water until it is thick, then pour it on the beef and marinate it again.
2. While curing, we prepare side dishes, and cut the millet and green pepper into rings and put them in a bowl for later use. Prepare some coriander, cut the roots into sections, chop up some leaves and put them on a plate for later use. Cut some chopped green onion and minced garlic and put them on a plate for later use.
3. When the water in the pot is slightly boiling, sprinkle the marinated beef. Don't turn the beef in a hurry after it is in the pot. After the beef is set, push it a few times. Don't put the beef in the pot for too long, you can take it out in about 40 seconds. Then add green pepper, minced garlic, chopped green onion and white sesame seeds, and pour in hot oil to stimulate the fragrance. Then add salt, sugar, soy sauce, balsamic vinegar, and finally add coriander. Stir well and it will be delicious.
