Ingredients
500 grams of pork ribs
2-3 cooked salted egg yolks
Salt, pepper and ginger
Light soy starch
5 dried chili peppers, 2 green onions, 1 green pepper
How to fry the ribs with salted egg yolk
Wash the ribs and soak them in water for 30 minutes, remove Bloody water.
You can also put it directly into the cold water pot, but you need to skim off the foam after boiling. Add two slices of ginger, a small handful of Sichuan peppercorns, an appropriate amount of salt (the soup must taste salty), and cooking wine. After high heat, turn to low heat for 30 minutes. Drain and serve.
When cooking the ribs, cut the green pepper into long strips and the green onion into sections.
Put a small amount of light soy sauce into the cooked ribs, crush the salt and cooked salted duck egg yolk and mix well. I just put it in the wok and stirred it without turning on the heat. Then dip it in dry starch and coat the mixed ribs with dry starch. It's best to use another plate to put the starch-coated pork ribs, as it won't mix well in the pot.
Put an appropriate amount of oil in the pot. This is for frying, not deep-frying! Just use a little more oil than usual for cooking. Fry until golden brown.
Sprinkle a little salt after cutting the green pepper. Put a small amount of oil in the pot and lightly fry the green pepper and dried chili until the skin of the green pepper peels off slightly and becomes blistered. I just used the little oil left over from frying the pork ribs. The oil in which the salted egg yolk has been fried will foam.
Pour the ribs and green onions into the pot and stir quickly evenly.
The mild spiciness and the taste of salted egg yolk give it a different taste.
Tips
If you don’t like spicy food, you don’t need to add dried chili pepper!
