Materials:
Hairtail, tofu, onion 20g, garlic 15g, ginger 15g, 2 dried red peppers, 30 peppers, star anise 1, soy sauce 1 teaspoon, half a teaspoon of oyster sauce, half a seasoning spoon of sugar, half a seasoning spoon of pepper and half a teaspoon of cooking wine.
Exercise:
1. Wash hairtail and cut into sections, and cut several straight knives on both sides of hairtail section. Cut the tofu into pieces the same size as the hairtail section.
2. Pour the oil in the pot, put the hairtail section and tofu block in the pot and fry until the skin turns golden yellow, and then take it out for later use.
3. Heat oil in a pan, add chopped green onion, garlic slices, Jiang Mo, star anise, pepper and dried chili and stir-fry until fragrant.
4. Add soy sauce, oyster sauce and sugar in turn.
5. Add boiling water.
6. Put the fried hairtail section and tofu block into the pot and stew on low heat.
7. Add salt and pepper to taste, add cooking wine to remove fishy smell, then simmer until the soup thickens and sprinkle with chopped green onion.
Kung pao beef tendon
Ingredients: beef tendon, garlic, ginger, onion, dried pepper, dried pepper, Chili powder, soy sauce, sugar, cooking wine, salt, oil and peanuts with skin.
working methods
1. Wash beef tendon, add ginger and onion slices, and press in pressure cooker for about 40 minutes.
2. Remove the shower water and cut it into small pieces.
3. Heat the oil in the pot. When it is about 40% hot, fry the peanuts with skin with a small torch. When the color gets darker, it will be fine.
4. Heat the oil in the pot, add the dried pepper, dried prickly ash, garlic slices and shallots and stir-fry, then add the beef tendon and stir-fry.
5. Add soy sauce, Chili powder, cooking wine and sugar, and drain the soup.
6. Finally, add the fried peanuts and mix well.
Sauté ed mushrooms with cabbage
Ingredients: 2 baby cabbage, 8 mushrooms, salt and oil;
working methods
1. Remove the outermost leaves of the baby cabbage, then remove the roots, wash the leaves and control the water. Then cut the leaves and stems, because the stems should be fried first. Cut the stem into strips the thickness of fingers;
If the mushrooms are dry, please soak them in water and slice them. If it is fresh mushrooms, directly remove the root slices;
3. Pour the oil into the wok, and choke the wok with onion and garlic when the oil is hot. After smelling the fragrance, first stir-fry the stalks of baby vegetables with mushrooms. Stir-fry until the mushrooms are wilted, then put the leaves. Season with salt and continue to stir fry until the mushrooms are fully cooked.
Tofu omelet
Ingredients: tofu, minced meat, eggs, cooking wine, monosodium glutamate, refined salt, flour, wet starch, onion, shredded ginger, soy sauce, clear soup and oil.
Exercise:
1. Cut the tofu into pieces 5 cm long, 3 cm wide and 1 cm thick with minced meat in the middle, and steam in a cage.
2. Beat the eggs evenly, add cooking wine, monosodium glutamate, refined salt, flour and wet starch, and stir into a paste. First put a layer of paste on the big plate, arrange the tofu blocks in two rows on the paste, and then put a layer of eggs on the tofu.
3. Add a little oil and push the tofu into the pot when it is heated to 50%. Stir-fry until light yellow, add minced onion and ginger, and pour the juice made of clear soup, soy sauce, cooking wine and monosodium glutamate.
