working methods
1. Wash the broilers;
2. Wash onion, ginger and garlic, cut into sections and slice for later use;
3. Mix pepper powder, salt, onion, ginger, garlic, monosodium glutamate, sugar and cooking wine for two hours;
4. Wash and dry, and then smear the whole body of the broiler with soy sauce;
5. Heat the oil in the pot to 70% heat, add the broiler and fry until it is broken;
6. When the color turns red, turn to low heat, cover the pot and cook the chicken.
7. When the oil in the pot is heated to 80%, add the chicken and fry it again, then take out and drain the oil.
