Braised Hairtail in Brown Sauce

Ingredients: hairtail, pepper, onion, garlic, ginger, soy sauce, cooking oil, sugar and a little chicken essence.

Exercise:

1. Shredded onion, sliced garlic, sliced ginger and sliced pepper for later use;

2. Wash the hairtail and cut it into sections, or you can cut it several times with a knife to ensure the taste;

3. Soak the chopped hairtail in chicken essence for ten minutes;

4. Put a little oil in the hot pot, fry the hairtail until golden brown, and take it out;

5. Wash the pan and change the oil. Add onion, garlic, ginger and pepper, stir-fry until fragrant;

6. Add hairtail and stir fry, add a little soy sauce and sugar, and start the pot.

Dry fried hairtail

Ingredients: 2 fresh hairtail, 2 eggs (practical 1), starch, cooking wine, salt, five-spice powder, minced onion and ginger.

1. Shred onion and ginger, remove intestines, heads and tails from hairtail, wash and cut into long sections, and then marinate with onion, ginger, five-spice powder, cooking wine and salt for 30 minutes.

2. Break up the eggs, add proper amount of starch and mix well, and then prepare some dry starch.

3. Dip the salted fish in a layer of dry starch first, and then hang a layer of egg paste.

4. Heat the vegetable oil in the pan, take out the hairtail segments, put them in the oil pan one by one, fry them with slow fire until they are golden on both sides, take them out, fry them again, and serve.
