The method of making salt-baked chicken is as follows:
Tools: baking paper, basin, oil paper, brush, wok, shovel, enamel pot, oven, plate.
Ingredients: Farm chicken, coarse sea salt, vegetable oil, salt.
1. First, choose a farm chicken about 3 pounds in size, clean it, hang it to dry, and set aside.
2. Sprinkle salt on the inside and outside of the chicken, massage evenly and marinate for more than 4 hours or overnight.
3. Take 2 larger pieces of oil paper and brush a layer of vegetable oil on the oil paper to prevent sticking.
4. Place the marinated farm chicken in the middle of the oil paper.
5. Wrap it well and tie both ends tightly.
6. Pour 4 pounds of coarse sea salt into the pot, stir-fry over medium heat until hot to the touch.
7. Use a 25 cm enamel pot and spread 1/3 of the heated coarse sea salt on the bottom of the pot.
8. Put in the farm chicken wrapped in oil paper.
9. Continue to shovel in the remaining heated coarse sea salt until the entire chicken is covered with coarse sea salt, and cover the pot with an enamel lid.
10. Preheat the oven to 200 degrees for 10 minutes in advance, and put the enamel pot into the middle and lower layers of the oven.
11. Close the oven door and bake at 200 degrees for about 60 minutes.
12. After baking, let it cool slightly before opening it.
13. Put it on a plate and it is ready to eat.
