Step 2: After shelling, cut off the old roots of bamboo shoots, leaving tender parts, and then cut the bamboo shoots into small strips. If the pickling container you prepare is larger, you don't need to cut it!
Step 3: I prepared a mineral water bottle. The quantity of this bottle is about 1000g. One bottle can eat two meals. Cut the bamboo shoots one by one and stuff them into the mineral water bottle until it is full!
Step 4: Fill a bottle with bamboo shoots in mineral water, and then pour a lot of mountain spring water or mineral water or well water into the bottle. Try not to use tap water, because there is a lot of bleaching powder in tap water, and sauerkraut is easy to deteriorate.
Another thing to note is that sauerkraut must not be dipped in half a drop of oil! Clear water must not pass bamboo shoots, but bamboo shoots in water are easy to deteriorate and then covered and sealed.
Put the mineral water bottle with bamboo shoots in a cool and dry place, and it will become sour bamboo shoots after 15 days of fermentation. Don't touch it if you don't eat so fast. A year is not bad, but it is getting sour!
In the process of fermentation, a lot of gas will be produced, so after a while, you will find that the mineral water bottle for making sour bamboo shoots will swell up. Remember to open the lid slowly when eating!
