Accessories: oil, salt, soy sauce, gooseberry, garlic, chives, peanuts, Chinese cabbage and green onions.
Shredded chicken with scallion and Lamian Noodles

Prepare a piece of chicken breast.

Put the chicken breast in a pot with cold water, add two slices of ginger, cook it and remove it for later use.

The cooked and cooled chicken is shredded by hand.

Prepare Lamian Noodles (see my menu for details).

Put a little oil in the pot, add peanuts and stir-fry until fragrant.

Cut garlic into minced garlic and onion into chopped green onion for later use.

Boil water in a pot. After the water boils, add noodles and vegetables, stir fry, cook until it is not cooked, take it out and put it in a bowl.

When cooking noodles, take another pot to boil oil, add scallion to make scallion oil, heat and cool the oil a little before splashing noodles.

After the noodles are cooked, put them into a bowl filled with good dishes, add one spoonful of vinegar, two spoonfuls of soy sauce and a proper amount of salt to the bowl, then add sesame seeds, shredded chicken and chopped peanuts to the noodles, and finally pour one spoonful of hot onion oil.

A bowl of delicious oil sprinkled noodles is ready.

1. When splashing oil, use a little more oil, but not too much. The spilled noodles should be oily at the root, but no oil can be stored at the bottom of the bowl. If you store oil at the bottom of the bowl, there will be more oil and it will be greasy to eat.
2. frying onion oil is very important. Cool the oil with a small fire, flatten it slowly, and let the onion fragrance completely melt into the oil. This kind of noodles is fragrant and delicious enough.
3. Slow down in Lamian Noodles. If you are not skilled, you can cook the noodles in the pot several times, otherwise the front noodles are rotten and the back ones are not ripe.
4. If you like dark colors, you can add some soy sauce to mix noodles.
