Although Yan 'an is located in northern Shaanxi, the local snacks are not much different from xi 'an, and the local oil cakes and yellow buns made of millet flour are also delicious.
Oil residue cake
Also known as rice cake and jujube cake, it is one of the most representative local snacks in northern Shaanxi. It is fried with millet and jujube of Millet family as raw materials. Golden color, delicate and soft, sweet and delicious. All hotels and restaurants are sold as local specialties. When the Central Red Army successfully arrived in northern Shaanxi, Yan 'an people entertained the Red Army soldiers with oil cakes. There is also a description of oil cake in Shandan Dan Hua Hong, a folk song in northern Shaanxi. Oil cakes are often used in festivals or occasions for entertaining relatives and friends, especially at wedding banquets. Youmomo
Round, ring-shaped, fried and as golden as copper coins are symbols of wealth and good fortune in Yan 'an folklore. The finished product is a small round cake with a hole in the middle, fried to reddish brown. Oil buns should be served on holidays.
Potato brush
Potatoes are potatoes, and potatoes are often called "potatoes" in Shaanxi. It is one of the special snacks in northern Shaanxi. Among them, the mung bean jelly in Zichang county is the best, with green color, which has the effects of clearing away heat and toxic materials, relieving summer heat and quenching thirst. Pancakes made of flour
Made from refined buckwheat bran, it can be used with dried bean curd, hot bean curd and all kinds of stir-fried dishes. The edible methods are diverse, cool and delicious, and can be eaten all year round. It's best to make it ready-to-eat, which tastes best. Zichang pancake has a long reputation in northern Shaanxi.
Haggis
Stewed sheep's head, sheep's hoof, sheep's blood, sheep's liver, sheep's heart, sheep's intestines, sheep's belly and sheep's lungs have a good nourishing effect. Mutton offal can be fried and stewed. It's delicious.
Qian Qian rice
Refined from coarse grains. The raw material is black beans. After soaking, they are pressed into the shape of copper coins on a mill, so people call them "Qian Qian rice". 20% bean money and 80% rice are mixed together and put into the pot in turn. When the bean money is half cooked, put the millet.
Buckwheat noodles
Make vermicelli with buckwheat, which is delicious with mutton soup. In northern Shaanxi, there is a saying that buckwheat noodles and mutton soup go hand in hand. Wuqi County and Zhidan County in Yan 'an are rich in buckwheat, and the buckwheat noodles in the two places are the best.
Fruit stuffing
