[Cooking Steps]:
1. Chop the ribs into about one inch long, soak them in clear water for 20 minutes, then add a spoonful of white vinegar and a spoonful of high-concentration rice wine, knead them for 3-5 minutes, remove the blood and wash them out, then rinse them, add cooking wine and ginger slices, and marinate them evenly for 20 minutes.
2. After the ribs are marinated, put them in cold water in the pot and pour in proper amount of cooking wine and ginger slices. After the fire boils, remove the floating foam that overflows the water surface, remove the ribs from the water and wash them with warm water for later use.
3. Add enough water to the soup pot and boil it. Put the ribs in the pot, pour in a little cooking wine, ginger slices and scallions, continue to boil over high heat, and turn to low heat for one hour.
4. After stewing, open the pot, put the soaked kelp into the pot, add a little salt and white pepper to taste and refresh, continue stewing for about 10 minutes, then turn off the fire and serve.
