Preparation of frozen pigskin with lean meat
1. Cut the lean meat into large pieces, soak it in cold water with pigskin for one hour, and put two slices of lemon in it. Change the water twice on the way.
Wash the lean pigskin, put it into the pot with two slices of lemon, add cold water to avoid pigskin. Bring water to a low heat.
When the water boils, there will be a lot of blood. While the water is boiling, take out the lean pork skin with chopsticks and put it in a warm water basin.
2. Scrape the grease off the pigskin with a knife.
3. Check the pig hair outside the pigskin and pull it out (my secret weapon is eyebrow clip). Wash with warm water and cut into thin strips. Don't wash it in cold water, the pigskin will roll up and it won't be easy to cut. Wash lean meat and cut it into small pieces.
4. Wash the pan, put the cut lean skin back into the pan, and add 2000ml warm water and 10 g cooking wine. Add onion ginger, pepper, aniseed and fragrant leaves (the spices are best wrapped in gauze and conditioning box, and it is convenient to clean up at last). Boil with high fire, then simmer for 50 minutes, add soy sauce, soy sauce and salt, continue to stew for 10 minutes, and turn off the fire.
5. Remove the onion and ginger spices, pour the lean skin and stew into the basin, and let it cool in the shade. Then apply plastic wrap and put it in the refrigerator.
6. After freezing in the refrigerator for ten hours, draw a circle along the edge of the basin with a knife, turn it over and put it on the chopping board, and pat the bottom of the basin hard. Thin pork skin jelly is ready!
7. Cut everything into plates and eat it directly, or mix it with vinegar, garlic and sesame oil.
8. Lean pork skin jelly is rich in taste.
