deep-fry
Heat the oil in the pan, heat the shredded ginger to 60%, pour in the dried fish, and then fry the dried fish a little more, so that the dried fish will not smell fishy and taste better. This process takes about 3 minutes.
After the small fish is fried, add some salt, add garlic slices and stir fry together. Be careful not to sow the garlic slices too early, or they will burn easily.
Step 3: Seasoning
Add cooking wine to remove fishy smell and increase fragrance, stir-fry evenly.
Add light soy sauce, add color and fragrance, and stir well.
Add oyster sauce to remove fishy smell and improve taste, and stir well.
Push the dried fish aside, add pepper, sprinkle some salt on the pepper, and press the pepper with a shovel to make it more delicious. Stir well with dried fish after pressing. If you can eat spicy food, you can add Chili powder, and spicy food is enough.
Dried fish usually has a fishy smell. You must suppress the fishy smell to make this dish successful. Ginger, garlic, cooking wine, pepper, oyster sauce and frying can all play a role in removing fishy smell.
Slide some water along the edge of the pot to make the dish less dry and more delicious. But be careful not to add too much water, because too much water will not smell good. If you like to eat the crispy one, you can consider not adding water.
Finally, add some chicken essence to improve the taste, stir fry evenly and you can serve.
