Whenever I watch TV or read a book, my mouth is always full of snacks. Among them, licorice and olives are my favorite snacks since childhood. Because they are easy to buy and cheap, I always buy a few catties at home. But when I grew up, I found that the licorice olives I bought were not as delicious as when I was a child. Think about it, too. Licorice olives more than 20 years ago, pickled with white sugar and rice vinegar licorice, are sweet and sour, and have a strong unique fragrance of olives! But now licorice olives are preserved with saccharin or sodium cyclamate, vinegar essence and licorice powder. The taste is definitely not as good as before. Eating too much is bad for your health!
But I can't live without this snack, so I have to figure it out and make it myself!
Materials?
4 kg of fresh olives
Crushed rock sugar (sugar is also acceptable) 4 kg.
Salt 1 kg
50 grams of licorice
Pure rice vinegar 4 kg
Honey 1 kg
How to make licorice and olives?
First, clean the fresh olives, dry them and marinate them with salt for three days.
After three days, the salt olives were discharged from the salt water, washed three times in the basin and soaked in clear water for 24 hours.
Drain the olives soaked in clear water, and then prepare a big urn or a big glass jar. I use a 10 kg glass jar, a layer of olives, a layer of broken rock sugar, a few grams of licorice, and 50 grams of honey. Repeat this step until all the materials are put away, pour rice vinegar into the sealed bottle mouth and put the jar in the shade.
After a month, open the bottle to drain the water, then dry the olives in the sun or blow dry them with a hot air blower for 8 hours, and you can enjoy them!

Sun-dried olives should be put into a sealed bag immediately, so that they can be stored for 2 months. Don't touch too much moisture in the air. If possible, they can be stored for 4 months!
