Actually, it depends. We usually dry sausages in two environments. Either in the sun or in a dry and ventilated shade. There are also differences in the taste of sausages made by these two methods. The latter is recommended here, because we know that the moisture in sausages will be fully evaporated in the sun. This is actually not a good thing, it will make our sausages taste very dry and hard.
Generally speaking, if we choose to air-dry sausages in the sun, it usually takes us about 2~3 days to finish the work. If we choose to put them in a cool, dry and ventilated place, it usually takes us eight or even ten days to finish the work. In addition, it is worth mentioning that the main basis for distinguishing whether sausages are air-dried is whether sausages turn dark red and whether casings are wrinkled. When the sausage is dry, we can take it down and eat it.
