Step 1
Mine is a mixture of duck feet and wings. In fact, you can make duck wings or feet alone. There are about seven or eight slices of ginger and an octagonal. Four teaspoons of cooking wine are measured in the picture.
Second step
Put a little oil in a small hot pot, add 1 tablespoon of sugar, and prepare to fry the sugar color.
Third step
Stir-fry until the oil starts to smoke and the sugar turns brown and bubble gum.
Fourth step
After the sugar is fried, you can turn the fire to medium-high fire. Quickly pour star anise and ginger slices into the pot, then pour duck wings and feet into the pot and stir fry. Hurry up, or you will suffer if you fry too much sugar.
Step five
Wait until the duck wings and feet are fried to color, and then pour in the prepared cooking wine. The steam of cooking wine will take away the fishy smell of ducks and evaporate. Stir fry for a while.
Step 6
Pour in the right amount of soy sauce and continue to stir fry and color.
Step 7
Stir-fry until the duck feet turn red and bright, and pour cold water that has not passed the duck feet along the pot.
Step 8
After the soup is boiled, skim off the froth. Cover the pot, turn to low heat and stew for about 30 minutes until the soup is thick.
