Method for make crispy pork belly
Ingredients: pork belly (weighing one and a half to two Jin), fermented milk, fresh soy sauce, salt, oyster sauce, onion ginger, allspice powder, cumin granules, Chili noodles, cooked sesame seeds, honey, cooking wine, pepper granules and a little star anise.
Steps:
1. Wash the pork belly. When the pot is hot, rub the pork belly skin face down into the bottom of the pot a few times. When the skin is blistered and golden yellow, take it out and scrape it with clean water to remove the burnt part. Then, boil with cold water, skim off the floating foam, and take it out for cleaning.
2. Wash the pork belly with cold water, add onion ginger, cooking wine, star anise and pepper to stew the pig, cook until there is no blood coming out with chopsticks, and then take out the pork belly. This cooking process usually takes about 20 minutes.
3. Stick the cooked pork belly on the skin with a toothpick while it is hot, and then coat it with a layer of honey and a layer of fresh soy sauce.
4. Add oil to the pot. When the oil temperature is 60% hot, put the pork belly skin face down into the pot, and quickly cover the pot cover to prevent the oil from spilling out and hurting people. When the crackling sound in the pot becomes smaller, uncover the lid and take out the pork belly.
5. Add fermented milk, cooking wine, shredded onion, shredded ginger, salt and spiced powder to the fished pork belly, grab it evenly, and set aside to marinate for about 20 minutes to taste.
