1. Cut the prepared turtle and put it in a bowl. Add cooking wine, salt, chopped ginger and onion to the bowl and stir well.
2. Marinate for 20 minutes, put the ginger slices on the bottom of the dish, put the marinated turtle on it, and put the ginger on the turtle.
3. Pour the water into the pot, boil the water with high fire, then put the steamer at the bottom of the pot, put the turtle on the steamer, cover the pot and steam for 30 minutes.
4. Pour a spoonful of soy sauce, two spoonfuls of steamed fish soy sauce, one spoonful of oyster sauce and one spoonful of sesame oil into a bowl, stir well and pour it on the steamed turtle.
5. Put shredded ginger, shredded onion and coriander on the turtle, and finally pour hot oil to steam the turtle.
