1900, Emperor Guangxu and Empress Dowager Cixi of the Qing Dynasty stopped in Kaifeng to avoid the disaster in Eight-Nation Alliance. A chef in Kaifeng prepared a meal and presented "Fried Fish in Sweet and Sour". After eating, Guangxu and Empress Dowager Cixi praised them again and again. Guangxu called it "ancient capital delicacies"; Cixi said happily, "I forgot to return after dinner." The eunuch who came with him wrote a couplet in calligraphy: "Where did the silver carp come from, the ancient Bianliang in the Central Plains", which was presented to Kaifeng for recognition.

1930 or so, the famous Kaifeng teacher covered the fried "Longxu Noodles" with the cooked "Fried Fish in Sweet and Sour" for the first time, and created a famous dish "Baked Noodles with Fried Fish in Sweet and Sour", which was deeply loved by customers. The two are combined into one, so you can eat fish and dip noodles in juice, so it has a special flavor. Since then, this dish has gradually spread.

Later, Lamian Noodles spread Kaifeng, and people fried it with Lamian Noodles as thin as hair, and served it with silver carp, which was even more icing on the cake. The delicious taste of "Fried Fish in Sweet and Sour" lies in two flavors in one dish. It has the reputation of "eating dragon meat first, then eating dragon beard meat" and has become an indispensable delicacy at the banquet. Since the reform and opening up, with the increasing foreign exchanges, carp noodles have been loved by more and more tourists.

Carp baked noodles are strictly selected and carefully made. It is the carp (weighing about one catty) produced from Kaifeng Black Port to Lankao Dongtou Yellow River. This kind of fish is pure, delicious and tender. After preliminary processing, the carp is rippled on both sides and fried thoroughly in a hot oil pan; Add sugar, vinegar, ginger juice and chopped green onion.

"Sweet and sour fried fish" is made of carp, especially the Yellow River carp. After preliminary processing, both sides of the fish are cut into ripples with a bevel knife and fried thoroughly in a hot oil pan. Then add some sugar, balsamic vinegar, Jiang Mo, cooking wine, salt, etc. Add boiling water and running water, bake the juice with strong hot oil until the oil and sweet and sour juice are completely blended, add fried fish and pour the sauce.

"Baked noodles" is called "Longxu Noodles". At first, noodles were boiled in water, and later, they were continuously improved and fried to make them fluffy and crisp. After sucking juice, it is eaten as a side dish, so it is called "baked noodles".
