The history of sushi

There are different opinions about the origin of sushi. In ancient Southeast Asia and the coastal areas of China, there were foods similar to sushi, but in different forms. Japanese sushi mainly consists of kimbap or seaweed, sashimi, cucumber, pork floss and roasted onion, with mustard, horseradish, soy sauce and vinegar. . On the coast of China, there is a cylindrical rice ball made of glutinous rice, egg yolk, crispy skin, peanuts, vegetables and cooked shrimp, which is called a cooking stick. It is covered with a layer of cooked dough. The method is a bit like holding sushi, but the material and shape are different. According to legend, this rice stick came from Yue State (Zhejiang Province) in the Spring and Autumn Period and belonged to the traditional food of the ancient Yue people.

In the year 200 AD after Koguryo surrendered to China, that is, in the later Han Dynasty, this kind of food "Fu" has begun to spread in China, and it is said that it was introduced by the marine nationalities in Northeast Asia (Fuyu, Donglai, Mahan, etc.). In the dictionary, it is defined as food made of salt, vinegar, rice and steamed fish fillets. Sometimes fried fish sticks are used as the main ingredient and mixed with rice balls. The shape is an oval sphere, which looks like a football. But most of the time, there is no fixed shape. Catfish also uses steamed fish chops with powder or steamed fish chops with rice, but it uses rice, which can be used by heating or cold mixing with cooked fish. During the Song Dynasty, there were frequent wars in China, and it was just a kind of food to satisfy hunger. There were many kinds of food, including vegetables, fish and meat, and other combinations, but because there was no fixed form, it was different from Japanese sushi.

In the early days when Chinese characters were introduced to Japan, Japan added its own understanding of Chinese characters and replaced some Japanese food with Chinese characters with similar or different meanings. What about Japanese food? Siusi? It became? Hey? ,? Shasimi? It became? Hey? .

Small food made of rice, raw fish and sauce appeared in the post-Han period, which was much smaller than that in China. This is the ancestor of Japanese sushi later. At the same time, China's fishstick bibimbap can be regarded as a brother or neighbor of sushi. It's just that it's not widely circulated and popularized now.

In 700 AD, that is, Nara era, early Japanese snacks were named sushi as holiday food. Sushi has gradually become a daily food, especially some fishermen's rice balls pickled with some vinegar, plus some seafood or meat, pressed into a small piece and neatly arranged in a small wooden box as food along the way. In the era of Kamakura shogunate, sushi has been widely spread, becoming an ordinary item and a symbol of Japanese food culture.
