The correct way to eat dried bracken
1. Braised dried bracken with pork belly

Wash the pork belly, cut it into cubes, put it in the prepared pot, boil it with high fire, skim off the floating foam, and then take it out of the pot when the pork belly is cooked enough to be easily pierced with chopsticks. Rinse the dried bracken with water, cut it into small pieces with a knife and soak it in warm water. Soak sweet potato vermicelli in warm water until there is no hard core, and then rinse the vermicelli. Put the pork belly in a hot oil pan. First, the pork with streaky pork is facing down, and then fried until it is crisp red. However, it should be noted that the water should be completely dried before the pork belly is put in to prevent oil-water mixing and frying. Stir-fry onion and garlic, add dried bracken, add white sugar and soy sauce to taste, cut pork belly into large pieces, put into a wok, add appropriate amount of soup stock to the wok, stew for about 20 minutes, then add sweet potato powder to stew for 5 minutes, and then add appropriate amount of seasoning to take out the wok.

2. Stewed skin of dried bracken

The bracken is soaked in warm water in advance, cleaned and cut into small pieces with a knife. Wash the prepared pigskin without leaving any pig hair or excess fat. Then put the pigskin into a bowl, steam it in a steamer until it can be easily punctured with chopsticks, and then cut the pigskin into small strips with a knife for later use. Heat the oil in the pan, add the onion, ginger and garlic, stir-fry until fragrant, add the dried bracken, stir-fry for a few minutes, then put the cut pigskin in the pan, stir-fry until the pigskin becomes discolored, then add the soy sauce and sugar, then put the uncooked vegetables in the pan, and simmer for about half an hour on medium fire. When the soup is collected on high fire, add the chicken essence and salt and stir-fry evenly.

3. stir-fried bacon with bracken

Soak the prepared dried bracken in warm water, rinse it with clear water, and cut it into small pieces with a knife for later use. Soak the prepared sausage in rice, rinse it with clear water and cut it into even small pieces with a knife. Put oil in the pan, stir-fry bacon sausage while it is hot, and put less oil. Because the oil content of bacon and sausage is relatively high, add dried Chili and stir-fry until fragrant. Then put the prepared dried bracken into the pot, add appropriate amount of salt and soy sauce, and then pour the dried bracken into the pot and stir-fry until it is cooked.

4. Stewed ribs with bracken

Prepare clean steak in advance and marinate it with oil, salt, cooking wine, minced ginger and garlic and sugar for about an hour. When marinating ribs, soak dried bracken in warm water, then rinse it with clear water and cut it into small pieces with a knife. Pour the oil into the pot, heat it to 70% maturity, put the marinated ribs into the pot, fry the ribs in the oil with low fire until both sides are golden and crisp, then add a proper amount of warm water and stew for about half an hour. After about half an hour, you can put the dried bracken into the pot and continue stewing for half an hour. Add the right amount of salt, chopped green onion and shredded pepper before taking out the pot.

5. Dry and cold bracken

Soak the dried bracken in warm water for two hours to soften it, cut it into small pieces with a knife, then put the soaked dried bracken in a pot and roll it in hot water for about fifteen minutes. After taking out, cool the dried bracken with cold water for later use. Slice the prepared green pepper with a knife, chop the garlic, pour it into the bracken and stir well. Put an appropriate amount of oil into the pot, heat the oil to 80% heat, pour the hot oil evenly into garlic powder and green pepper with a tablespoon, add seasonings such as soy sauce, balsamic vinegar, sugar, sesame oil and salt, and stir well.

6. Stir-fry dried bracken.

Soak dried bracken in warm water, rinse with clear water, cut into small pieces with a knife, prepare eggs to break up, and add a small amount of pepper powder. Put oil in the pan, heat it to a slight heat, then pour in the egg liquid, cut it with chopsticks and mix well. After washing the pot again, pour the oil, heat it, add the dried bracken, stir-fry with soy sauce, sugar, vinegar and salt, stir-fry for a few minutes, then add the egg pieces and stir-fry for a while, and put the monosodium glutamate out of the pot.
