Practice steps:
1, ribs in cold water, add cooking wine, onion, ginger to remove fishy smell, boil the water for two minutes, turn off the fire, take out and rinse.
2. Put oil in the pot, add rock sugar, cook until the oil bubbles, add ribs and stir fry until the surface of ribs turns yellow, add onion, ginger, garlic and star anise and stir fry.
3, add cooking wine, soy sauce, vinegar, rock sugar, stir-fry a few times, add water without ribs, simmer on low heat 1 hour for about 20 minutes, and add salt for about 50 minutes.
4. Collect fire juice and sprinkle sesame seeds.
