How to stack fish:
(1) Treat the plaice first, scrape the scales off the plaice, then cut open the stomach, take out the internal organs, clean the gills, then wash them with clear water, and then make several cuts on the fish. Put the ginger into the incision, so it's easy to taste. Sprinkle some shallots, sprinkle some salt on the fish, add some cooking wine and marinate on the plate for about 20 minutes.
(2) Sprinkle shredded onion and shredded ginger on the bottom of the fish dish, pick up the marinated fish, control the soup and put it into the prepared fish dish. Sprinkle some shredded onion and ginger on the fish, put water in the pot and steam for 8- 10 minutes. Take out the pot and clean up the shredded onion and ginger. Pour off the water separated from the steamed fish, sprinkle with shredded onion and ginger, and pour with steamed fish and soy sauce. Open another oil pan, heat the oil in the pan, and pour the oil on the fish while it is hot, OK! It's time to eat, isn't it simple?
