First, the high-end restaurant represented by the "Eight Major Events" specializes in high-end banquets and does not accept individual guests. Most customers are dignitaries and celebrities. The "Eight Big Cities" are all located in Houjia area, and Juqingcheng Restaurant was the first one to open. Then Juhecheng, Julecheng, Yihe City, Yishengcheng, Fujucheng, Jushengcheng and Juyuancheng Restaurant opened one after another, and became famous in Tianjin.

"Badacheng" is a quadrangle structure, surrounded by beautifully decorated elegant rooms, and there is a singing stage in the middle of the yard. The car can be parked in front of the door, and there is a garden in the yard for customers to chat and rest in the pavilion. The quiet living room is furnished with mahogany furniture, displaying all kinds of antiques and celebrity calligraphy and painting. Most of the utensils used in restaurants are painted with various sets of high-grade porcelain with words and patterns such as "long life without borders", "long life without borders", "generation after generation" and "evergreen all the year round", and the technology is extremely elegant.

The "Eight Great Stages" catered only to pre-booked banquets and were good at barbecue dishes, which was in line with the aristocratic customs after the Manchu Dynasty entered the Central Plains. In front of the restaurant, there are gold-lettered signs of "Man-Han Banquet", "North-South Cuisine" and "Delicious Seafood". The business scope ranges from high-grade Man-Han Banquet (also known as barbecue banquet, 108 pieces) and eight seats of bird's nest and shark's fin (48 pieces) when Li Hongzhang was the governor of Tianjin Zhili, to middle-grade duck wing banquet (36 pieces) and low-grade sea cucumber chicken wing banquet (650 pieces).

Second, two meat restaurants. The two meat restaurants with Tianjin flavor not only order high-class banquets but also receive end of banquet. They are good at making "four big steaks" and "eight big bowls", and their business is very prosperous. In the early days, Erhun Restaurant in Tianjin was most famous for its large scale, complete equipment and strong technical force. Most of the chefs in charge of the kitchen are young and middle-aged chefs who have completed apprenticeships in restaurants in eight major cities.

Among them, the most representative Erhun Restaurant is Fang Tianyi Restaurant, which opened in the fifth year of Guangxu in Qing Dynasty (1879) and has the reputation of "the first restaurant in the world". At that time, the newly-opened Dengyinglou Restaurant hired the chef of Fang Tianyi Restaurant to cook "Fried Shrimp" at a daily salary of one ocean, which shows the prominent position of Fang Tianyi Restaurant in Tianjin cuisine.

Another famous wedding restaurant is Assorted Restaurant, which is located in the north of Tianyi Square, less than 100 meters away from Tianyi Square. As early as the Guangxu period of the Qing Dynasty, Assorted Zhai was famous for being good at cooking Tianjin local dishes with pure flavor. "Tianjin Literature and History Series" records that Ding and Ding Boru, the fourth generation of Kinmen tycoons who have been customs officials for generations, love the "agate wild duck" with assorted vegetarian dishes. Even for family banquets, the master of assorted vegetarian dishes should be invited to cook this dish alone. In addition, the assorted hot pot in Assorted Zhai is also very famous, with no less than 20 kinds of main and auxiliary ingredients. The main courses are chicken, duck, fish, meat and seafood, which are unique and beautiful in shape and unique in flavor. It is a famous dish in Kinmen.

The third is the banquet hall, which is called the "outside table", except for the reception of scattered seats, mainly for weddings and funerals. This kind of restaurant is generally small in scale, and its business is outside, that is, the catering department sends chefs with various utensils to set up sheds and stoves in customers' homes in advance to cook all kinds of banquets focusing on weddings, funerals and weddings. There are two kinds of restaurants: one has a restaurant, the other has no restaurant, and the restaurant has a banquet hall. Generally called "Garden", such as Yongqing Garden, Hongsheng Garden, Jusheng Garden, Fushun Garden, Zuichun Garden, Yixing Garden and Zhonghe Garden. Most restaurants without shops have spacious courtyards with all kinds of cookers. Although the business of this kind of restaurant is not very busy, due to the small expenses and the business of renting tables, chairs and tableware, the profit is very considerable. Around 1930s, there were as many as thirty or forty such banquet places.

Most of the banquet halls in Tianjin are located in the residential areas of Hedong, Hebei, Heather, Xitou and Beikai in the old city, mainly dealing with all kinds of authentic middle and low-grade Tianjin dishes. Moreover, each restaurant has different characteristics, attracting customers with its own unique skills and housekeeping dishes. The main course of the banquet hall is four steaks and eight bowls of dishes with Tianjin flavor, but the grade is slightly lower than that of the second meat restaurant.

Fourthly, Muslim restaurants are divided into mutton restaurants, beef restaurants and noodle shops.

Qingzhen cuisine is an important part of Tianjin cuisine, which is inextricably linked with China cuisine during its formation and development. It absorbs the exquisite cooking skills of Chinese cuisine and makes full use of the rich products of Kinmen. After a hundred years of integration and development, it gradually becomes its own system. Tianjin Muslim cuisine should be the first mutton restaurant, which belongs to a high-class restaurant dealing in halal dishes. Generally, it has a large scale, luxurious shops, elegant furnishings and rich dishes. Not only whole lamb dishes (whole lamb mats), but also river and sea foods, and some also operate roast ducks, which are fresh in all seasons and cakes and snacks. This mutton restaurant is generally named after the word "Lou". The catering industry in Kinmen used to be called "the ninth floor" and "the twelfth floor" to describe the prosperity of Muslim high-end restaurants. The most representative floors of Muslim 12 are Hongbin Building and Fanghui Building. Hongbinlou is good at cooking high-level halal banquets such as delicacies and seafood, especially at making whole sheep dishes. Fanghui Building was opened after the Republic of China. It is famous for its high-grade swallow-wing seats and enjoys a high reputation in Muslim mutton restaurants.

The scale of Tianjin Muslim Beef Restaurant is moderate, and its business scope is smaller than that of mutton restaurant, but its history is earlier than mutton restaurant. At first, some beef shops processed leftover beef into "clear stew" or "casserole stew" for sale, which was welcomed by customers because of its exquisite seasoning, proper cooking and delicious taste. Since then, beef with sauce has been added to the water, and shops and chefs have been gradually added to develop into a medium-sized Muslim restaurant with beef and mutton, beef tongue tail, beef in the water and Jinmen specialty river seafood as its main dishes. Because of its mellow taste and moderate price, it is deeply loved by customers.

Muslim noodle stuffing shops refer to steamed stuffed bun shops and dumplings run by Muslims. Muslim stuffing shops have a long history and appeared in the early Qing Dynasty. Besides steamed stuffed bun and jiaozi, they also run simple cooking. There are also some foods in the stuffing of halal pasta, which are round pies and long ones called Sichuan style pork, and they are all thin-skinned and big stuffing, which are cheap and unique in flavor and deeply loved by diners.

Five, vegetarian restaurant, mainly engaged in all kinds of Tianjin vegetarian dishes and all kinds of vegetarian pasta snacks. Vegetarianism is a part of Tianjin cuisine. The earliest recorded vegetarian restaurant was in the middle of Qing Dynasty. At that time, there were two vegetarian restaurants, Zhensu Building and Zangsu Garden, both of which were located in the Drum Tower, the center of the old city of Tianjin. Most of the diners are Buddhists, Buddhist disciples and vegetarians. The materials used in vegetarian dishes are all natural plant foods and their replicas, but the cooked dishes can be confused in color, fragrance, taste and shape.

Among vegetarian restaurants, Suzhen Building, which was opened in Datong in the 33rd year of Guangxu reign of Qing Dynasty (1906), has a large scale, "clean equipment, low price and perfect management". In the early years of the Republic of China, there were many vegetarian restaurants in Jinmen, such as Tang Cuixiang, Cuixiang Restaurant, Suxiangzhai, Liuweizhai, ChangSu Yuan and Shitoumen 10. The early 1930s was the most prosperous period of Tianjin vegetarian restaurant.

Jinmen vegetarian food also has a famous Shimen sill vegetarian bag. Subao Store was once the "Su Zhen Garden". Because of the heavy rain, the water flow was not smooth, the shop was flooded, and a stone threshold was built at the door. Gradually, the word "Suzhen Garden" disappeared, and the "stone threshold" spread. Shimen sill is wrapped with thin leather stuffing, and 19 kinds of auxiliary materials are added into the stuffing, and crumpled and folded. White and bright after cooking, fragrant, fresh but not greasy.

In addition, in the early years of the Republic of China, the rice stalls and restaurants in the bird market were as dense as forests. After 1930s, Heather, Guo Zhuangzi and Qian Dezhuang were called the four major rice stall markets in Tianjin. In the 1940s, restaurants in Tianxiang, Taikang and Ye Quan enjoyed a prosperous business. By 1946, there are more than 2 10 restaurants in Tianjin, and there are nearly 100 restaurants in Tianjin. From 65438 to 0947, the Kuomintang regime was dying, and those in power stepped up their efforts to search for people's fat and paste, which made all walks of life depressed and the people struggling. Under the influence of the general climate, most restaurants closed down one after another.

Nowadays, in Tianjin, restaurants featuring Tianjin cuisine include Tianjin Restaurant, Hongqi Restaurant, Fang Tianyi Restaurant and Bohai Restaurant.
