3. Put the fermented dough on the chopping board, knead it into four small doughs, put it into a buttered mold, sprinkle with ground orange peel, cover it with a wet cloth, simmer for a while, put the dough in the oven for about 50 minutes at the beginning, take it out, cool it, and cut it into pieces.

Techniques for making brown bread:

Fresh orange peel or fresh orange peel can be used instead of orange peel.

Method 2 of brown bread

In a small bowl, mix warm water, yeast and sugar, and stir for about 10 minutes to make them mix evenly and foam.

Heat two glasses of water, melt honey, butter, chocolate and vinegar, and stir well.

Sift whole wheat rye and high-gluten flour evenly.

Add two cups of mixed flour, wheat bran, coriander seeds, fennel seeds, salt, coffee powder and chopped green onion to the blender. While stirring at low speed, add the mixture of yeast and chocolate. Stir at medium speed for another three minutes until uniform and smooth. If you don't have a blender, do it by hand.

Then turn to low-speed mixing, add the remaining half cup of mixed flour, and clean up all the dough stuck to the mixer. This project is relatively large.

Take it out and keep rubbing it. It doesn't matter if it's not very uniform.

Knead it into a ball and put it in a buttered bowl. Turn around twice. Don't let the dough stick to the bowl. Cover it with plastic wrap and let it ferment in a warm place for one and a half to two hours to double its volume.

Sprinkle some corn flour and maybe more flour to make the dough surface less sticky. Take it out and divide it into two parts and put it away.

Bake in an oven preheated to 370 degrees Fahrenheit for 45 to 50 minutes until the surface turns brown.
